Ingredients

Eggnog
  • 7 eggs
  • 2 cups Whole Milk
  • 2 cups Heavy Cream
  • 1 cup Sugar
  • 1/2 half Vanilla Bean or 1 tsp Vanilla Extract
  • 1 tsp Ground Nutmeg
  • 1/2 tsp Ground Ginger
  • 1/8 tsp Ground Clove
  • 1/2 tsp Cinnamon
  • Ground Nutmeg for topping
Eggnog Instructions

In a large bow separate out egg yolks and mix until yolks are combined.

Slowly add in the sugar a little bit at a time while mixing.

After the sugar is added, continue mixing until the mixture thickens and is at the beginning stages of a meringue.

Heat the milk over medium-low heat until hot, but not boiling. Steam should be coming out.

Ladle in the hot milk into the eggs while mixing vigorously with a whisk to temper the eggs.

When the eggs have been tempered, add into a saucepan and reduce the heat to low, and stir. Add in the seeds of a vanilla bean and keep stirring, until the mixture thickens to thickly coat the back of a spoon or edges of the pan.

Pour into a bowl and add in the ground nutmeg, ground ginger, ground clove, allspice, cinnamon, and heavy cream.

Mix until well combined then pour into an airtight container and let cool. Refrigerate once cooled.

Pour into a glass, top with a little nutmeg, and enjoy.

(Alternatively, you can choose not to heat the milk and temper the eggs if you want a no cook eggnog.)
