In a blender, combine flour, sugar, eggs, milk, and vanilla extract. Blend until ingredients are well combined and there are no clumps of flour.
Put a cast-iron pan in a 450°F oven to get it warm then add the butter in and spread it around the pan.
Pour the batter into the pan and bake for 20 minutes then reduce the heat to 350°F and bake for another 7 to 10 minutes.
In a small saucepan on medium-low heat, add in the brandy and reduce for 8 minutes.
Then add in the flour and mix to combine.
Add in the brown sugar, cinnamon, and nutmeg and combine.
Lastly, add the peaches, coat them, and then simmer on low for 10 minutes.
