How To Make Drunken Wings

Ingredients

Chicken Wings
  • 6 Drumettes or Flats
  • Canola Oil for Frying
Bloody Mary Sauce
  • 1 1/4 cup Tomato Juice
  • 1/3 cup Vodka
  • 1/2 tsp Tabasco
  • 2 tsp Horseradish
  • 1 tbsp Worcestershire Sauce
  • 1/4 tsp Celery Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Black Pepper
  • 1/2 Lemon, juiced
  • 4 tsp cornstarch
Bourbon Honey BBQ Sauce
  • 3 oz Tomato Paste
  • 1 oz Bourbon
  • 2 1/2 oz Apple Cider Vinegar
  • 1 1/2 oz Molasses
  • 5 tbsp Honey
  • 5 tbsp Brown Sugar
  • 1 1/2 tsp Worcestershire Sauce
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • 3/4 tsp Garlic Powder
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper (optional)
Tequila Lime Sauce
  • 2/3 cup Tequila
  • 1/2 cup Lime Juice
  • 2 tsp Lime Zest
  • 1 tsp Ground Cumin
  • 1/4 tsp Ancho Chili Powder
  • 1 tsp Kosher Salt
  • 3/4 Tsp Ground Black Pepper
  • 2 tsp Cornstarch
  • 3 tbsp Blue Agave Syrup
Chicken Wings Instructions

Make sure wings are well-drained and patted dry with a paper towel. Chill them in a fridge uncovered overnight to help dry them out.

Put some canola oil in a cast-iron pot and heat to 350°F.

Use a spider to gently drop in the wings in and cook for 4 to 5 minutes. Then drain on a wire wrack.

Increase the temperature to 375°F and fry for an additional 2 minutes.

Toss in one of the sauces below.

Bloody Mary Sauce Instructions

In a small saucepan, add in 1 cup of the tomato juice and vodka. Simmer for 25 minutes to cook all the alcohol out.

Mix the cornstarch in a little water to make a thick milky liquid and pour it into the hot mixture while stirring rapidly and turn off the heat.

(Note: You may need to add more of the cornstarch mixture to thicken the sauce even more)

Add in the 1/4 cup tomato juice, celery salt, onion powder, garlic powder, black pepper, tabasco, worcestershore sauce, and horseradish.

Mix everything to combine.

Do not reheat the sauce.

Bourbon Honey BBQ Sauce Instructions

In a small saucepan, add in the tomato paste, smoked paprika, onion powder, and garlic powder.

Optionally add in the cayenne pepper if you want it to be hotter.

Heat on medium heat while stirring for a few minutes and then add in the bourbon to de-glaze the bottom of the pan. Then add in the apple cider vinegar, molasses, honey, worcestershire sauce, brown sugar, salt, & pepper.

Reduce to a simmer and cook for 25 minutes to cook out the alcohol.

Tequila Lime Sauce Instructions

In a small pan add in the tequila, ground cumin, ancho chili powder, kosher salt, and black pepper.

Bring to a simmer for five minutes for one minute to cook all the alcohol out.

Add in the cornstarch mixture (water and cornstarch) and stir to thicken.

(Note: You may need to add more of the cornstarch mixture to thicken the sauce even more)

Reduce the heat to low and add in the blue agave syrup and the lime juice, then mix it in.

Remove from the heat and add in the lime zest. Mix it in.
